Holiday Apple Spice Bread

Just because it is the holiday season and this recipe sounded really good.


Apple Spice Bread

3 small apples, unpeeled, shredded
¾ cup boiling water
1 ½ cup whole wheat flour
½ tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp allspice
½ tsp cloves
1 Tbs and 1 tsp vegetable oil
¼ cup milk
2 egg whites
1 tsp vanilla
¼ cup packed brown sugar

Place apples in a small bowl, add boiling water. Cover and let stand until completely cool. Preheat oven to 350(F. Oil a 4x8 loaf pan. In a large bowl, combine flour, baking powder, baking soda, and spices; mix well.
In another bowl, combine oil, milk, egg whites, vanilla, and brown sugar. Beat with fork or wire whisk until blended. Add to dry ingredients along with apple mix. Mix until all ingrediendts are moist. Place batter in pan. Bake 45 minutes or until done. Cool in pan on wire rack for 5 minutes, then turn on to rack to finish cooling.
